Blackberry-Rosemary Splash
FOR THE SIMPLE SYRUP
Combine the sugar, water, and rosemary in a small saucepan. Bring to a boil, stirring constantly until sugar dissolves completely. Set aside and let cool to room temperature. Cover and refrigerate. Will keep for up to a week.
FOR THE COCKTAIL
Put the blackberries in a cocktail shaker and crush them lightly. Add ice to fill the shaker, and the vodka, lemon juice, and simple syrup. Shake vigorously. Strain into a martini glass and top with Champagne. Garnish with a rosemary sprig.
