Gorgonzola and Fig Crostinis

The creamy texture and salty flavor of the gorgonzola cheese paired with the sweet, earthy flavor of the fig jam makes these crostinis a little bite of heaven.  You can always find gorgonzola cheese and fig jam in my refrigerator, so these are my go-to snack for unexpected guests.  They pair perfectly with a glass of red wine.

Preheat the oven to 350 degrees F.

Place the bread slices on one or two baking sheets, to fit. Bake for 10 to 12 minutes. Drizzle or brush the bread with olive oil. Bake until crisp and golden. Remove from the oven and let cool slightly.

Spread each slice of toast with about 1 tablespoon of Gorgonzola.  Top with a teaspoon-size dollop of fig jam.  Transfer to a serving platter.
