  • 2 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup buttermilk
  • 3 bananas, mashed
  • 1/2 cup walnuts, finely minced (about 2 ounces)

Nutty Banana Bread

When I was in high school, Grandma taught me to make her banana bread.  I brought it to school and shared it with my girlfriends at lunch time.  It was then that I learned that making good food could make me popular.  I had so many requests from my friends that I found myself making it again and again.

Preheat oven to 350 degrees F.  In a small bowl, mix flour, baking soda, baking powder, and salt.  Set aside.

In a medium bowl cream together sugar, oil, eggs, and vanilla.  Alternately add the dry ingredients and the buttermilk in three additions to the creamed mixture.  Gently stir in the bananas and nuts.

Pour the batter into a greased 9-by-5-inch loaf pan.  Bake for 45 to 55 minutes, or until a toothpick comes out clean. Let the bread cool in the pan for 5 minutes. Finish cooling on a wire rack.
