Ingredients

 
  • 1 pound sharp cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup pimentos
  • 1 tablespoon pickle relish
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Dash of hot sauce (optional, use as much or as little as you like)
  • Crackers or toasted bread for serving

Pimento Cheese Spread

My grandfather used to make the best pimento cheese spread.  He didn’t have a food processor, so he made it with an old-fashioned meat grinder.  He used Velveeta, which gave the spread a really mild flavor.  In my recipe I use sharp cheddar for a little extra bite.  When I would come home from college, he would always send me back to school with some.  I love it spread on crackers or as finger sandwiches on white bread.

In a food processor, pulse cheese until it looks like a fine meal.  Add mayonnaise and blend until creamy.  Add pimentos, relish, onion powder, salt, pepper, and hot sauce. Blend until combined.  Serve with crackers or toasted bread.
